Lena Tashjian loves cooking. Her specialty is vegan Armenian food, as you can see on her instagram. Lena grew up thinking that Armenian food was very meat-centric. But when she went vegan she realized she still had a lot of choice. She made the same discovery again when she went to Armenia. This was the inspiration behind her cookbook, to share the incredible breadth of vegan Armenian food.
Lena’s father is from Marash, and here mother is from Yozgat. This had a big impact on her culinary upbringing. Her grandmothers on both sides were prolific cooks, and those two places have similar iconic dishes, but in very different styles.
From a young age she got to explore the little nuances of Armenian cooking from different regions. That specificity of flavour and style have carried through to her cooking today. You can see more of her recipes at @veganarmeniankitchen.
